Food Recipes - Pancakes / Pikelets Recipe

What many Australians call pancakes, others call pikelets or Scottish pancakes. These are thicker than the traditional crepes and use self-raising flour. You can adapt the size of the pancake to the size of the appetites. Smaller pancakes go further and are easier for small children to handle.

If you are cooking with a group of children from different families, you may find some that have a different way of making and eating pancakes. Use this positively by talking about how different people can have different ways of doing things, yet they can all be right.

Ingredients:
  • 2 cups self-raising flour
  • 2 tablespoon sugar
  • 1 egg
  • 1 ½ cups milk
  • Pan
  • Bowl
  • Spoon
Method:
  1. Mix eggs and sugar in a bowl.
  2. Add some flour, then some milk until all the flour is mixed in. (Talk about how the flour makes the mixture drier and thicker, and the milk makes it wet and runny.
  3. Heat pan.
  4. Add a little butter to pan.
  5. Spoon or pour in mixture, as little or a much as you want. One tablespoon makes a good sized pancake for a child.
  6. When bubbles show on the top of the pancake, flip and allow the other side to cook.
  7. When cooked serve with topping or side of choice.

Variations:

Try these to add some interest and also reinforce the idea that cooking can be creative and experimental rather than just following a list of rules.
  • Add some sultanas or other dried fruit to the mixture
  • Use canned fruit, substituting some of the liquid for the milk and adding chopped fruit to the mixture
  • Add mixed spice or cinammon
  • Try making different sizes to stack, or interesting shapes.
